Resurrecting the cooking style that he introduced at the beloved FIN, Pierce focuses on fresh seafood that he carefully sources and personally forages from the Oregon coast.
The cuisine highlights the versatility of seafood through the creation of nuanced flavor profiles, creative use of ingredients, innovative technique and presentation. An open kitchen located directly in the dining room invites guests to witness this creative process firsthand. Dishes are accompanied by a rotating, carefully curated, beverage selection that is chosen specifically to complement the dishes on that week’s menu. Our beverage selection has a wide range of options with particular emphasis on wine, sake, sherry, cider, beer and spirits.
